This project is a partnership between Ulster University’s Environmental Health students, the Chartered Institute for Environmental Health, a local secondary school, and local businesses, in which food destined for the landfill as waste is diverted to create a tasty and nutritious meal. Students will learn from undergraduate Environmental Health students about the environmental impact of waste food, including CO2 production contributing to climate change. They will also learn about food deterioration, preservation and the safe preparation and cooking of food. After briefing, the students will then prepare a hot meal from food diverted from landfill.
